My Favourite Turkey Chilli

Perfect cold-weather comfort food.
Serves 6 portions. Prep Time: 10 mins, Cook Time: 45 mins. Total: 55 mins

Ingredients:

• 2 teaspoons olive oil

• 1 yellow onion, chopped

• 3 garlic cloves, minced

• 1 red bell pepper, chopped

• 1 pound extra lean ground turkey (or chicken)

• 2-4 tbsp chili powder

• 2 tsp ground cumin

• 1 tsp dried oregano

• . tsp cayenne pepper

• . tsp salt

• 1 (28-ounce) can diced tomatoes or crushed tomatoes

• 1 . cups low-sodium chicken broth

• 2 (15 oz) cans dark red kidney beans, rinsed and drained

• Optional: 1 (15 oz) can sweet corn, rinsed and drained

• For topping: cheese, avocado, cilantro, sour cream/Greek yogurt, hot sauce, etc!


Directions:

1. Add oil to a large pot and place over medium-high heat. Add in onion, garlic and diced red pepper and saute for 5-7 minutes, stirring frequently.

2. Now combining our spices. Add in chili powder, cumin, oregano, cayenne pepper and salt, stir for 30 seconds. Feel free to adjust spice ratio as you like. Next, add in ground turkey and break up the meat; cooking until no longer pink.

3. When the meat is done, stir in tomatoes, chicken broth, kidney beans and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens as desired. Taste and adjust seasonings as necessary.

4. Garnish with everything you'd like. My recent go-to additions are sliced jalape.os,avocado, Greek yogurt and Valentina’s hot sauce. Easy to freeze.
